Pairing coffee is simpler than pairing wine, because coffee only ever does two things against food: it agrees, or it cuts through.
Complement
Match intensity with intensity. A dark, cocoa-forward roast beside a chocolate brioche extends the same flavour rather than competing with it. Nutty medium roasts do the same for almond pastry.
Contrast
Use acidity as a knife. A bright Ethiopian filter against something rich and buttery resets the palate between bites — the same job a squeeze of lemon does.
One rule to avoid trouble
Never put a delicate light roast next to something heavily spiced or very sweet. The coffee will simply disappear, and you will have wasted the best cup on the counter.
