The best baristas are not the fastest ones. They are the ones who make a busy counter feel unhurried — a skill built from preparation rather than speed.

Dialling in before the doors open

Every morning starts with a shot pulled purely to be thrown away. Humidity, bean age and grinder temperature all shift overnight, and the first twenty minutes of service are only calm because someone spent thirty minutes before it correcting for them.

Reading the room, not the queue

A regular who wants silence and a first-time visitor who wants a recommendation need opposite things. Recognising which is which — and giving each of them what they came for — is most of hospitality.

The handover

The cup arrives with the name of the coffee and one sentence about it. Not a lecture; an invitation. People taste more when they have been told what to look for.
